Comments: This warm, very dark, wine is very characteristic and has roots in the middle ages in the area around Modena and reggio Emilia.

After fermentation the wine ages for 12 months in wild oaks barrels. After bottling, it further refines for 12 months in the bottles.

Open the bottle and let it breath about an hour, or pour using the Centellino wine aerator, at 18°-20°C. (64.5°-68°F). It pairs well with a variety of rich and flavorful foods such as pasta with earthy, tomato-y sauces, grilled meat, roasted chestnuts, dark, bitter chocolate.
