Comments: The Sangiovese and Merlot grapes used to make this wine grow on hilly, well ventilated calcareous soil, and are harvested between the end of September and the first half of October. The two varietals are crushed and fermented separately in iron vats at a controlled temperature then, still separated, the wines are transferred into oak barrels, where they are left to age for 12 to 20 months. The wines are blended at bottling time, then they refine six months before the first bottles are released.

Better served at 18°C. (64.4°F.), paired with rich, full-flavored recipes. In Tuscany, you may see it paired with polenta seasoned with game sauce, tortiglioni pasta with goose sauce, or roast sage pigeon.

Comments: The Sangiovese grapes used to make this Chianti DOCG are produced from five-to-ten year old vines, and are harvested at the end of September. The wine ferments and ages in stainless steel vats.

It is limpid purply-red in color with complex, intense nose which opens with notes of red fruits such as wild berries and cherries, then expands in a delicate violet scent. In the mouth it is warm, yet fresh because of the mineral notes already suggested in the nose. The fine tannins are balanced by the acidity and body of the wine.

Pair with red meat dishes and medium-aged cheese.

Comments: Made with Sangiovese and Canaiolo grapes grown at 500 meters (1,640 feet) of elevation, harvested between the end of September and the first days of October. The wine ferments and spends the first four months in stainless steel vats, then it is moved into 30 hectoliter (about 792.5 gallons) French oak vats.

Lively, ruby red color, with intense, complex nose which reminds of violets and small, fresh, wild red fruits. In the mouth it is soft, with good acidity and balanced tannins. Serve at 17°C. (62.6°F.), with red meat dishes and medium-aged cheese.

Comments: The Sangiovese grapes used to make this blush wine are harvested in mid October and left to macerate inside the pressing machine for 24 hour before undergoing soft press. The fermentation lasts about 20 days in stainless steel vats at a controlled temperature kept below 18°C. (64.4°F.), where it then ripens for three months.

The color is deep pink, thanks to the maceration with the grape skin before pressing. To the nose it is clean, intense, with strong aromas of wild strawberries, raspberries, pomegranates and cherries preserved in spirit, as well as lighter floral scent of violets and wild roses. To the palate it is soft and velvety, well structured, with light tannins and good acidity. All in all, this wine offers a very good harmony between the olfactory and taste sensations.

Excellent paired with smoked fish, tagliolini pasta with cherry tomatoes and crisp red snapper, grilled vegetables and seafood, frittura mista and fresh or medium aged cheeses.

Comments: Made with Sangiovese grapes grown on clayey, hilly soil are harvested in the second half of September. The wine undergoes malolactic fermentation in stainless steel vats, then it is transferred into oak barrels where it spends the next 10 to 12 months.

Ruby red in color, to the nose it reveals notes of dark fruits such as blackberries and blueberries, which opens to tertiary aromas of leather, clover and tobacco. To the palate it is soft, with good acidity and lively, yet soft tannins. The aroma of dark fruits and minerals remains after swallowing.

Best when served at the temperature of 17°C. (62.6°F.), paired with typical Tuscan fare, however it is great with grilled and roasted meat with aromatic herbs and rucola salad, pasta dishes and cheese.

Comments: Made with grapes harvested during the second half of September, then left to wither for months in special shelves. The grapes are pressed when the winemaker is satisfied that the juice left is at the perfect level of sugar content, ready to start its slow transformation, which will last for years in typical caratelli barrels.

Amber colored, this meditation wine has an intense, complex nose, with notes of spices and dried fruits such as figs and plums. To the palate it is full, almost creamy, and gives the pleasant warm sensation of the perfect combination of alcohol and residue sugar.

Comments: Made with Moraiolo and Frantoio olives harvested by hand in October and November from trees grown at 200 to 500 meters of elevation with a southwestern exposure.

The olives are crushed by a continuous-cycle press at a controlled temperature kept under 30°C. (86°F.) and the oil is extracted with a centrifuge. There is no filtration, but the oil is clarified naturally by successive periodical decanting.

Excellent olive oil for daily use in salad seasoning, pinzimonio, and cooking. To the nose it has crisp aroma of fresh cut grass, In the mouth it is harmonious, balanced and persistent, with pleasant fruity notes of olives and artichokes.

Comments: Made with Moraiolo, Frantoio, Leccino, and Pendolino olive varieties, harvested by hand from around mid October to almost the end of November from trees grown at 120 to 500 meters of elevation.

The color is straw yellow with golden highlights. The nose is very intense and complex, while in the mouth it is a touch bitter, tangy and very persistent.

Excellent as salad seasoning, on soups, for dipping and drizzled on grilled meat or steamed seafood.
